With the rumour mill running into overdrive, The Star Gold Coast has finalllly released the first official teasers of its latest entertainment precinct and what’s set to become the crown jewel atop its new, five-star luxury hotel tower—The Darling (ed’s note: fabulous name for a hotel, BTW).

The accumulation of a year’s planning in secrecy, The Star Gold Coast can now formally announce the two heavyweight local businessmen enlisted to ensure this project will seriously shine. A man who needs no introduction is Simon Gloftis, owner of Hellenika and founder of The Fish House, the latter of which he sold last year to concentrate on this mega undertaking.

Simon is teaming up with long time friend Billy Cross; a veteran nightclub owner who shaped Surfers Paradise’s legendary nightlife landscape back in the 80s and 90s, and is today a respected festival promoter and events bar consultant. Oh, and he’s also famed for creating Manpower’s Thunder From Down Under—a household name in the US with a residency show in Vegas—but alas, we anticipate there will be no bare-chested male review involved here.

Details are still being withheld when it comes to the name, theme, décor and menu (all the juicy stuff!), but with no expenses spared in this staggering $20-million-dollar, 1,500 square metre rooftop precinct, it’s obvious whatever they have in store will be a total game-changer for the Gold Coast.

Here’s what we do know: On track to open in March 2018, the star of the show will be a fanciful 110-seat modern Australian restaurant (some 19 floors up) overlooking The Darling’s luxe infinity pool with wrap around views of the shimmering Gold Coast skyline. Featuring a floor-to-ceiling cellar with a doozy of a wine list (think: 500+ bottles), the restaurant will adjoin a swish-as-hell lounge bar complete with a six-star fit out, staggering capacity for 500 guests and, we predict, a killer rotation of touring DJs. There’s also talk of an upstairs VIP dining room slash bar for 30 and another exclusive 80-person seat VIP bar that’s connected via an internal stairway. While the jury’s out if us regular plebs will ever make it up those stairs to VIP utopia, we can already taste the cocktails and what GC life might be like post March.

Well positioned to top anything the Coast has ever witnessed in its lifetime, The Darling’s rooftop restaurants and bars will no doubt become an iconic must-visit on any savvy traveller’s itinerary—all the more reason our beloved Gold Coast is establishing itself as an absolute force to be reckoned with.
